It’s almost fall and finally time to get back to my stew recipes. I love to cook and eat them, but they just don’t work for our family during the hot summer months. One of the first recipes I have to make this time of the year is my favorite, super easy lentil stew. It cooks up faster than just about any other type of stew since lentils are so small and get tender fast. We also like it because it is a hardy meal that’s very affordable because it doesn’t have any meat in it.

It’s not your usual lentil recipe and with the other flavors blending together with the lentils in the stewing process, the result is a thick and yummy soup, perfect with a piece of homemade bread or a plain muffin. In case you have any leftovers (I seriously doubt you will), this stew freezes well.
