Do you love eggs and omelets? I do! I used to eat them constantly, nearly every day as a matter of fact. Now I try to be more balanced about eating eggs, limiting it to a few times a week at most, sometimes scrambling just the egg whites so I can manage my cholesterol a bit better. I think I enjoy eggs because they’re satisfying without being to filling, and also because they taste just as good for breakfast as they do for dinner. Sometimes I come home from work and I just crave a cheese omelet with a slice of whole grain toast. My favorite stainless steel frying pan is just the right size for a small, personal size omelet. When I buy things for my home, I really try not to buy too much junk. I have enough stuff that I bought on impulse that turned out to be pretty useless. Now that I’m wiser consumer, I think about my purchases more. For instance, is it something I really like? Will it be something I’ll get a lot of use from or is it just something that caught my eye. Some people who are into organizing say if it isn’t useful or if you don’t love it, you should just get rid of it. Easy to say, but the sentimental stuff is tricky. I really enjoy cooking and tend to do a lot of stove top cooking, especially over the weekends when we have more family time. It might mean making a big breakfast omelet on Sunday, grilling sandwiches for lunch on Saturday, or searing a juicy steak at dinner.  I  do find that I end up using multiple pans for these tasks, like my 10 inch nonstick open fry pan or my cast iron grill pan.  I had been considering getting a new pan for awhile, perhaps a slightly bigger pan and one with a lid.  Then when I was browsing the web recently I came across this great Rachael Ray Porcelain Enamel 12 Inch Saute Pan. Don’t you love having new cookware? The new pots are so shiny and unblemished, the pans haven’t been scratched or dinged by someone trying to force them into the cabinet to fast or washing them with the wrong scouring pad. Of course the best thing about new cookware is how nice the finish is and how easy it is to cook in, especially if you buy a quality set that is made to last. I was shopping for a new set that my sister and I are planning to buy for my niece as a housewarming gift and came across this great Classic 11 Piece Stainless Steel Cookware Set. Talk about an easy recipe!  And fragrant and delicious… this crockpot apple butter has it all.  With just five ingredients, you can have little jars of apple butter in your refrigerator by nightfall.  We start our crockpot going early in the morning, so that we have a finished batch ready to spoon over ice cream after dinner.  Then we put the rest in jars in the refrigerator to spread on toasted English muffins in the morning.  I must say, one batch doesn’t last very long in our house, between desserts and breakfast. There are a lot of bakers in my family. My grandmother’s family had a bakery when she was growing up and so she was an incredible baker. She always had the magic touch, perfect pastries and cookies – it was amazing. Never burned a cookie bottom and somehow even her chocolate chip cookies were the best I ever tasted. I’ve tried to duplicate them and come close, but just not quite. I can clearly recall her bakeware and I would have loved to see her bake her goodies using a silicone bakeware set. It’s almost fall and finally time to get back to my stew recipes. I love to cook and eat them, but they just don’t work for our family during the hot summer months. One of the first recipes I have to make this time of the year is my favorite, super easy lentil stew. It cooks up faster than just about any other type of stew since lentils are so small and get tender fast.
